News from the Cake Stall

The Cake Stall is one of St Joachim's popular stalls. Specialising in mostly homemade cakes, sweets and jams, you are bound to find some old time favourites at the Fete. The jams and marmalades make a great present and nothing tastes better than home baked cakes for afternoon tea!

Here are some of our favourite recipes for you to enjoy:

Lemon Butter
Yields about 3 pints (1,500 ml)
4 eggs
12 T (180 ml) lemon juice
2 T (30 ml) grated lemon rind
2 c (500 ml) granulated sugar
1/2 c (125 ml) butter
In heavy-bottomed medium-sized saucepan beat eggs until blended (use whisk or fork). Add lemon juice, lemon rind, sugar and butter.
Cook over low heat stirring or whisking constantly until mixture is the consistency of soft custard. Pour into jars. Cool and store in refrigerator.

Use Lemon Curd to fill tart shells or between cake layers.

Note: In England Lemon Curd is often canned for winter use.
Pour lemon curd into 1 pint (500 ml) hot sterilized canning jars. Cover with hot sterilized lids and rings. Seal jars. Process in simmering hot water canner for 20 minutes.
Remove jars from boiling water bath. Cover with a tea cloth. Let cool at room temperature. Test jars for seal. Store in cool dark place or refrigerate.

Suggestions for what to make for the Cake Stall

Fudge - all flavours - caramel, vanilla and chocolate
Coconut-ice
Marshmallows
Honeycomb
Lemon butter
Jams
Cakes and biscuits
Lolly necklaces - with Allens brand wrapped sweets eg milkos, fantales etc.
There will also be a list set up of people who want to bake but not ice and vice versa. Cupcakes with very fancy/pretty icing are very popular, so if you can ice but don’t want to bake please let the Cake Stall Convenor know.

Don't forget that Friday before Fete day we meet in the hall after school drop off to pack sweets and dress up the jams etc.
